Experience the Surprising
Texture of Soy Milk Warabi Mochi
Texture of Soy Milk Warabi Mochi

Warabi mochi is traditionally a soft, chewy Japanese dessert made from bracken
starch.
Here, however, you can experience a unique twist: soy milk warabi mochi, which has a
moist yet slightly crisp texture. The gentle sweetness of black sugar syrup perfectly
complements the creamy flavor of soy milk, making this treat enjoyable even for those
who are not usually fond of sweets. It is the perfect choice for anyone looking to
satisfy
a light craving in a beautifully crafted, enchanting atmosphere!

Interview with the manager

What unique elements do you have in your interior and
exterior design?

At the entrance of our cafe, you’ll find a Noh
mask
donated
by Kishiwada City.
In traditional Noh theater, the “side seats” are typically quite pricey, so dining in one of those seats is a truly rare experience.
Above the stage, there’s a distinctive plaque inscribed with the characters “国華 Kokka” (meaning “National Splendor”).
This unique piece makes for a memorable photo spot, so be sure to capture it when you visit!

What challenges and joys have you experienced in
running your cafe?

It was initially challenging because the exterior doesn’t make
it obvious that this is a Noh theater,
so it took time for people to understand what we offer.
However, through efforts in promoting on social media and our website,
we worked hard to establish a clear image for the cafe.
Seeing our customers’ smiles makes me feel that all the effort has been worthwhile.

What are your future plans for Kofuan?

In the past, I’ve focused on creating a space that many can
enjoy,
like hosting meetings for the Danjiri Festival,
children’s cafeterias, and hula dance events.
Moving forward, I’m excited to explore new ideas!
For instance, I’d love to try out nagashi somen (flowing noodles)
or even set up a danjiri (float) right in front of the cafe.
I’m also considering creating a mascot to compete with
Chikiri-kun (the official mascot character for Kishiwada City),
even if it’s unofficial!
